  1. Heat up the pot with olive oil

    Take a pot on the stove over medium heat and add the olive oil to the pot.

  2. Sauteing the onion and garlic

    Sauté the chopped onion and minced garlic in the oil about 3 minutes until it get soften.

  3. Mixing all other vegetables with spices

    Add the rest of the ingredients to the pot: carrot, zucchini, bell pepper , lentils, vegetable broth, turmeric, cumin, salt , black pepper and bay leaf. Mix it well.

  4. Cooking the lentils

    Turn the heat up to high and once it start boiling, turn the heat down to low and let it simmer for 20-30 minutes until lentils are cooked through

  5. Toppings

    Place it on plate and topped with finely chopped fresh parsley
